On the dock this week – fresh, wild caught Pacific steelhead trout from Washington State. That’s a mouthful! Steelhead have orange flesh like salmon but the flavor is somewhere in between salmon and trout, very mild and sweet. The fish will have medium flakes with a tender texture.
