This week we are offering fresh caught red grouper from Madeira Beach on the Florida Gulf Coast. From Sea to Table, “The folks we work with there do day boat fishing in a section of water that has even been designated by the city exclusively for grouper-focused fishing in an effort to preserve a traditional fishing community that is an important part of the town’s history.”
Grouper is lean and moist with large flakes and a firm texture. Red grouper is slightly sweeter and milder than black grouper and it is considered to be the better of the two. Baking, broiling, frying, grilling, and steaming are all good methods for cooking grouper.
