The box offers a variety of root vegetables, which as you would guess by the name, is actually the root of the plant. Because they grow underground, they are able to absorb all of the great nutrients the soil has to offer! Root vegetables are typically high in fiber, antioxidants and vitamins including vitamin A, C and B. Nutrients needed through the winter months!
